   Zinfandel will be ready for Pressing on MONDAY 21st @ 6 PM
            
                                                      Come down to Make Wine With Us and meet up with the American Wine Society Meadowland chapter to learn more.

Step one was completed last Saturday, We have crushed the grapes enough to break open the skins of the grapes (also called maceration) during the destemming process.  The wine is now going through the fermentation process where as the yeast is consuming sugars producing alcohol.   For Red wine we leave the skins in with the juice during fermentation to acquire the necessary red colors.   We have been punching down the wine caps to maximize the skin contacts with the juice to build more color and tannin.

On Monday we will begin step two in the wine making process called "pressing" to separate the skins from the juice.   We will then place the grape juice into oak barrels for aging where they will continue to build up alcohol, body and favors.
